A small minority who look a little younger than they are might lie but why (other than general scepticism/cynicism) would you suspect most would lie?
Record keeping of dates of birth is a legal requirement and with dates of birth being relatively common knowledge, it's almost pointless to lie about somebody's age.
I don't see it much these days but often the actress would hold her ID showing her age at the start of the scene.
