Many sites have 1 day trials for 1-3 dollars. Are those legit or do they have a caviat? Could I really sign up, download all the scenes I want and then cancel immediately?

99 percent now a days are stream only for the free trial. back 10-12 years ago a lot of them you could sign up and download a ton of videos. they have pretty much all wised up to people doing this and made all the free trials stream only.

I doubt they exist now but many years ago there was at least 1-2 sites that offered I think a 3$ trial membership that included full access and the ability to download the content. The one that still does that is porn fidelity but it's now 9$ but I think you can access all their content and you can download. The caveat is that it's a 3 day trial membership.

As a purely business decision. There is no good reason for any site to offer any kind of downloads for anyone paying 3$ or less when they now expect people to pay upwards of 30$ for the same thing for a month.

The reason cheap trial membership exist is because some people won't mind wasting what is likely less than the price of a cup of coffee and a few people forget to cancel on time and then get a huge charge on their CC.

I think your safest bet is to assume that any trial these days is streaming only. I've seen sites with full memberships that promise unlimited downloads but those are limited once you've joined, so I wouldn't trust any site to offer downloads on a trial membership.

Something else to consider is the biller. If you have a short trial you want a biller that you know is easy to cancel through. My favourites are CC Bill and Epoch. Those are easy to cancel online. Gamma sites (Adult Time, Evil Angel, Dog Fart, and many others) usually have an upsell for a trial when you join any of their sites. I suspect that upsell trial would be billed through the same biller, but I don't know for sure. Gamma has its own billers and I trust them too.

I'd also use SegPay or CustomerCare.co.

ALWAYS, ALWAYS, ALWAYS take note of who your biller is and if they send an email or otherwise give you membership information, KEEP IT! Also know what email address you've used and what credit card you've used. All of that will be very helpful when it comes to cancelling.

One thought I always keep in mind when signing up for a trial is that their hope is that I either forget to cancel or I can't figure out how to cancel. You'll note that when the trial membership expires, your membership will be converted to a monthly one, and often at a higher cost than if you had joined for a month. Trial memberships are to the site's advantage.
