I don't know for sure, but I imagine that if your girl washes her asshole well and uses an enema, your chances of getting really sick are probably pretty slim. If rim jobs were really risky behaviors, I'd think we'd hear of at least a few people dying from it, but I've never heard of anyone dying from it. Though you still probably don't want to do it every single day. I think Hepatitis is one of the main risks. But obviously only if the person has it. There are some nasty bacteria in poop to be sure. But there's also nasty bacteria in your mouth and your nose and your ears. As you say, people do it all the time and usually the only time anyone gets seriously ill is if one of them has a serious disease or a very weak immune system.
