Do porn actress get to pick the porn actors whom the actress wants to work with?
Does the director of the movie give the actress a choice of specific actors the actress can choose from?

It depends on the studio. It seems to me that most girls have a no-list of guys they won't work with, and most studios honor that it seems. Some studios ask girls who they like to work with and pick from that list, like Elegant Angel.
Personally I think it's for the best for all involved if girls(and guys ) have a say in who they're having sex with...usually a lack of chemistry is very obvious and causes me personally to lose interest in the scene.

They can make "No" lists of people that will not work with. They can even do it for crew as well as cast, if there is a cameraman or makeup artist they can't stand.
Some girls have decided they would only work with their boyfriends or husbands, at least in the past, though that probably limited their career at least some on the mainstream porn market. Though they may still make careers of it on the personally-run pay site and clips4sale market if they can develop a fan base large and loyal enough.
But a girl would really have to have a lot of pull, or also be the director, to say she does want to work with this guy for this scene, and work with that other guy for that other scene.

Of course they do. Any situations where they don't are unprofessional at best and criminal at worst.
Porn isn't legal if it's not consensual.
Joanna Angel won't work with anyone whose STD test is more than 48 hours old. That's if she knows you. I think it's 24 hours if she doesn't.

^ I think there's a difference between deciding yes or no, whether or not to sign the consent form and model release at the set on shooting day, and choosing her co-star when originally asked about if she would accept the booking.
And yes, female performer preference is considered when booking the male talent, when practical. But how much weight her preference is given depends on the project. If a movie from a major studio is intended to be a star vehicle for one female performer, then chances are very good that every guy in every scene with her is a guy she really likes working with, not a guy she just tolerates well enough to not put on her no list. For other projects, she may just accept the best available guy not on her no list. And of course, there are series where the director is also the male talent in every scene. If he tries to book her for such a series, she can accept or reject the booking, take it or leave it, but she can't very well try to change the male performer and have him cooperate.
To arrange a scene, they have to deal with female performers' schedules, male performers' schedules, crew schedules, and location schedules. And having the first choice in every category available on the same day can be an issue sometimes. Sometimes, if they can get their first choice on two or three of the categories, they may have to compromise and take their second or third choice on remaining categories to get the scene shot. Especially if it looks like it could be months before they could get first choices in all categories available on the same day again. And sometimes everything for a scene is booked, and then someone cancels the night before or morning of the shoot. If the guy cancels, I would hope they would call her and ask her if she would be willing to work with this or that other guy instead of cancelling the scene outright. And if the girl cancels, and they decide they'd like to at least attempt to find a last minute substitute rather than cancel the scene completely, any girls with valid, current tests called would just be able to say yes or no to doing the scene based on scenario and who is already involved.

Not a particularly pertinent example considering she doesn't work outside of her self-directed movies anyway. It's easy to be picky if you're the one doing the casting for your actress alter-ego.

It's true that a lot of her stuff is for own studio and mostly directed by herself. However Joanna has also worked for Hustler, Vivid, Penthouse, Evil Angel(Belladonna), Digital Sin, Zero Tolerance, New Sensations, Adam & Eve, Smash, Wicked, 3rd Degree and other smaller studios with other directors.
She's a busy girl.

Except what LCF said is BS anyway. Guys who tell girls if you don't do this scene I'll make sure you never work in this business again are full of bullshit. Any girl faced with an unprofessional idiot like that should just walk out and never work for him again. None of these guys can stop a woman working in adult again. Not even the guys at the very top.

If a girl is booked for a scene, and then suddenly decides at the last minute that she doesn't want to do the scene without good reason such as an emergency preventing her from doing it, then any director would have perfectly good reason to be pissed off. In such a case, she would be the unprofessional idiot, not him. Producing scenes costs money and time. So if a director has the scene booked, has rented a location, hired his crew and male talent, and then can't do the scene because of a girl who flakes, no one would blame him putting the word out not to hire her again.

I don't think she's done a sex scene for anyone outside of her own company for at least 3 years now (the last one I can think of is New Sensations' Scrubs parody). She's a busy girl, but she's busy because she's running Burning Angel, not because she's working for other people.

That shit has actually happened. There are/have been some very unprofessional idiots in the business who pull shit like that.

I usually don't care about who the stuntdick is but I do get bored if I realize all her scenes are always with the same guy, usually her boyfriend(jenna jameson's last decade for instance). Maybe it's because it's not as hot/slutty as a chick who fucks around with a bunch of different men, or maybe different guys will fuck her in different ways making for more differentiated scenes.
