I think directors often aren't alert to sweating. It's not so uncommon to watch a scene where there's a ceiling fan running throughout. I mean, wake up director! Turn the fricking fan off and let's see the girls sweating as nature intended. They could even go to the other extreme and turn on the heating in summer to make them break out in a sweat.
Sweat is also not always so easy to see...even when it is present. Just the way video works. Sometimes things that show up just fine to the human eye don't show up on video well at all. It can be a lighting issue as well. The human eye is more sensitive to certain lighting situations and less sensitive to others than the sensor in the video camera. The director may very well believe he or she is getting the sweat along with everything else and it turns out not to be the case. Sometimes, you have to set up the lighting in very inconvenient ways and shoot form bizarre, uncomfortable, inconvenient angles to make something like a thin sheen of sweat show up well on video. That can be extremely hard to do when you're trying to shoot something as dynamic as people fucking.

Alex Jordan (God rest her soul), Nicole Sheridan, Sydnee Steele, Val Malone, and Avy Scott are a few off the top of my head. Some useless info, the more someone sweats during activity (be it sex or exercise) generally the higher their fitness level; they tend to sweat more profusely and also break a sweat quicker.
