I love seeing behind-the-scenes stuff, especially scenes while they're shooting and changing positions or figuring out the next angle, as well as post-scene stuff, with the girl dripping cum and needing a shower while talking to the person filming the BTS. Any recommendations? Not a big fan of the pre-scene interviews. I like to see what it's like to film a sex scene as the sex is happening or how the actors react when it's over and they need to clean up and re-enter the real world where coworkers aren't naked and having sex with each other.

In Gangbang Auditions 10, there is a BTS that shows the whole of Ariana Jollee's scene being filmed. It's great. The most amusing parts are when you see the female camera operator tapping the guys to get them to move so she can get clear shots.

Two sites that have BTS scenes that seem to fit what the OP is looking for are Jesse Loads Monster Facials and See Him Fuck.

Jesse Loads Monster Facials is definintely worth checking out for this. Most of their scenes have a stationary camera in the background that captures the photo shoot and then the main scene being filmed. I think this would be exactly what you're looking for.

See Him Fuck is a bit unusual in that it is much more focussed on the male than the female. I'm not sure who the intended audience is but it isn't the typical straight male porn buyer. But, the unusual focus aside, they do have long BTS scenes for most of their main scenes.
