It's always better when they have brains! Sadly, there arent many of them but i can name two girls that belong to this category. Sasha Grey and Valentina Nappi.

I believe Mika Tan has a biology degree and may have even worked in some field in biology. I believe Tera Patrick has a biology degree. Asia Carrera is a member of MENSA. Akira Lane has a BA in international business and used to sell financial plans to car dealerships and worked in the computer industry. Cherie Deville has a PHD in physical therapy and is currently a physical therapist while doing porn.
Honorable mentions: Lisa Ann was a talent manager after her first retirement and being on top of the milf category for ten years she must have done a lot of smart things. Raylene went into real estate after her first and second retirement, and when you see her in interviews she looks like she could easily play the female lead on your favorite sitcom.
But keep in mind that being smart doesn't necessarily mean you are right in the head.

.No, I'm fairly confident that they all have brains & not defining the term further for the purpose of your discussion is ,arguably, not an 'intellectual' approach at best and offensive at worse.
That aside, a key element of attraction for me is learning something about an area in art, science, literature, or history that I did not know before. And three stars that come to mind who regularly do that for me(but not limited to) are Katja Kassin, Angela White & Sovereign Syre.

Casey Calvert graduated from college with highest honers in Film Studies. I believe she went to University of Florida before. She started her career after she graduated from college.
Carter Cruise was just a semester away from graduating from East Carolina before she quit to start her career. She is a gifted writer. ^ They both have that reputation. Not sure exactly why. I think Sasha Grey may have some background in literature or something like that. Apparently when you follow her and see a lot of her interviews it becomes apparent that she reads a lot.
Also, I would like to add Sophia Jade to the list. I think she may have an art degree or something. You get that intellectual vibe from her when you follow her on twitter. She carries herself well in interviews. Unfortunately she is only g/g and solo. I really wish she would do b/g - she is one of my favorite models.
And to add what Xhakorudan said about Mercedes Carrera - she also does a lot of social commentary on youtube. In fact, when I google her name by itself, I only get her youtube social commentary videos, and I have to type in pornographic language in the google search bar to find her porn videos. You will also see a lot of political commentary from her on twitter. She is a very independent thinker. That alone has caused me to consider following her and becoming a fan.

The term intellectual carries a lot of weight to me that would be out of place here. Particularly in Europe, where there is an established role for public intellectuals. I often find those who pass as public intellectuals in North America to be comparatively lightweight so applying it to most porn performers seems a bit misplaced. I would prefer to just say smart or intelligent.
Sasha Grey is an auto-didact and most of her comments seemed a little sophomoric, but no more than any other reasonably intelligent undergrad.
In terms of smarts, if you listen to the Rialto report, Skronker's old podcasts and read interviews I'd say I was struck by the intelligence and/or thoughtfullness of John Leslie, Richard Pacheco, Eric Edwards, Manuel Ferrara.
Candida Royalle, Gloria Leonard, Veronica Vera and Nina Hartley are all obviously quite intelligent women. Annette Haven too, although she is also a bit spacey and eccentric these days. Kay Parker, Georgina Spelvin and Aunt Peg (RIP) always speak well and carry themselves with real confidence. Vanessa Del Rio has what I would term street smarts in spades.
Modern wise I would say Lorelei Lee (who is named after the Marilyn Monroe character in Gentlemen Prefer Blondes) stands out if you've seen her interviews in porn docs or read her articles. Natasha Nice seems to be smarter than the average bear.

I don't know how you can truly define someone to be intellectual.Good education might be a hint but it doesn't mean that the stars will give that impression in front of the camera.
Remy Lacroix has a biology degree as far as I know.

I listened to her episode of the Porn Director Podcast, and would agree that she seems like a pretty smart cookie. Just wish that she had used more than 0.0001% of her brain power to pick a work name.

I would definitely say Angela White stands head and shoulders above the ranks of a number of articulate performers. First Class Honours from the University of Melbourne, Australia, one of the world's leading universities, is impressive. However, she is also an intellectual. If you read some her interviews and musings, she is a unique combination of great looks, excellent performance skills, highly educated and intelligent. I encourage anyone to look into her a little further.
