I don't know how pornhub arrived at their numbers, but looking at the site right now (sorting by "most popular" filtering by "U.S." and weekly, monthly or all-time) yields practically no ebony porn at all. But the answer to your question (regardless if the data is wonky or not) is why do people watch anything? Because they like it.
Most watched # largest audience, either. In other words, we don't know how many repeat viewings are included in PornHub's number. At least with DVD's we can assume that the number of repeat purchases is pretty low. [typo] Edited by - hardware on 8/4/2016 3:44:52 PM
To partially answer the OPs question, one of the things that happens with Pornhub's data, especially because it's free, is that it shows what people are watching that maybe they aren't willing to buy for whatever reason. Maybe ebony porn ends up being the most watched (in the South especially) is because people are either unwilling or unable to actually purchase it, so they watch it on Pornhub instead. And having found the article (I'm not linking to it because it's still hosted on Pornhub), what they're saying isn't that it is the most watched category, but that it's the most viewed category, which is slightly different. It means that it's the most viewed category page, not that more videos tagged ebony are viewed than any other genre, or that any ebony videos are particularly popular.
The OP seemingly being baffled that such a thing could be popular, and that it actually needs an explanation does strike me as unreasonable, and offensive if you really wanna get right down to it. He wants an answer though? OK. Black is beautiful. That was difficult.

Black male/white female porn seems to sell well given how popular it is, as long as the black guy is packing. The Mandingo Complex seems to be strong amongst porn watchers. The type of porn I'd like to see more of: black female/white male, that doesn't seem to sell as well and thus gets under-produced. I'd love to see some black female/white male porn produced like Tushy or with girls that get fucked like Rocco (non-violent Rocco) or Manuel do them where there is lots of oral play and kissing. ^ I was thrown off by the OP's question because it doesn't seem to have occurred to him that people enjoy watching black people have sex. I think it's a bit of a weird inquiry that suggests whiteness is the norm and blackness needs explanation.
Black women actually have smallest and strongest vagina's on average compared to white, Latina, and Asian women. So I wouldn't feel unmanly fucking one. I was just surprised that it was popular

Since ebony is apparently a specific category on that site, to me it just seemed like the OP was asking "What's so great about this category compared to others?" The question seemed innocent. However, his subsequent comment about black women having the "strongest vagina's" certainly gives me pause.
