I'm pretty new to this forum so I don't know if this is the right place to post this question. But I'm wondering if the dates shown on the boxcovers as production dates is that that date the scenes were shot? Or is it the dates they were released or what?

Those would be the dates the scenes were shot.

Sadly it get a little more complicated than that. Some studios list the production dates as the dates the individual scenes are shot while others list them as the date production finished on the movie. It all depends on the studio, but needless to say, listing the production date(s) on when the individual scenes are shot is highly preferable.
