Okay, so I first want to say I am not a huge anal fan. It's a turn on in some films, but for me is no big deal.
That said, all of the time in topics on these forums I see people clamoring for star "X" to do anal and people say that the girl doesn't do it "because she doesn't like it". That is bullshit, right?

I'm guessing the real answer is that a girl doesn't do anal because the dollar amount isn't right (i.e she does vaginal for $800, wants $1600 to do anal and no one will pay that rate so she doesn't do anal), but would like to know others thoughts.

I think porn stars are just like everybody else in terms of their sexual interests, likes, and dislikes. They have their individual preferences in sex. And some sex acts they don't like so much that they choose not to do them.
Getting paid a lot of money might be tempting. But not everybody falls for this kind of thing. If you already have a reasonable amount of money to live on, then getting more won't necessarily make your life any better. And in this kind of a situation, being offered more money to do something you don't like won't necessarily persuade you to do it.

Before I give you my opinion. I would like to know why you even bothered to start a thread about a subject you claim not to really care about. I could understand if you were into anal but you yourself say that you are not a huge fan.
Now back to your thread. Are there some porn performers who would do anal if the amount being offered was high enough? Yes, there are but I don't think the number is as big as you might think. Many porn girls do not practice anal at home and that's because they get no pleasure from it and probably got a lot of pain the one time they did try it. These girls will probably never do anal regardless of the amount.(I'm disregarding any amount above 20,000$ in my statement). Some porn girls experiment with anal at home but prefer not to do it on film. I suspect that there are a bunch of reason why they don't.(Now these girls might be tempted to do it but the amount they require for said act may be so high that most studios will not be willing to pay it. We get the final group which are girls that may or may not do anal at home but are more than willing to do it on screen for the right amount. These girls will normally do anal pretty quickly in their career and if they do it at home then may be able to do it more often and for longer. Girls that don't do anal at home may be les sinlcined to do it as often on screen because if they were into anal the they would probably do it at home.
Off course this is my opinion and I could be so far off course that what I just wrote is not remotely accurate.
