Well, in most cases, the DVD transfer is only going to be as good as the source material, which is still predominately Betamax tape. Even features shot on film don't usually turn out that much better when mastered. There are some studios that I would consider rock solid in not just encoding a VHS master. They include Private, VCA, Ultimate (recent titles), Wicked (except for a few problems here and there), Studio A, Digital Playground, Digital Sin, and Evil Angel. Apologies to any studios I left out, but those are the ones that come to mind.

Most of the stuff shot for DVD (i.e. virtual sex titles) have extremely sharp video, although sometimes so crisp that it seems artificial. Again, most of the studios listed above put out video transfers that are as close to the average mainstream ones as possible. I haven't seen anything that I've said, "OH MY GOD!" (well, not in that way! ), or anything that would be part of my system demo library.

In terms of sound, nearly all porn is shot with a stereo boom microphone in less than acoustically ideal conditions, so any "reference" audio will be the music added in afterward. "Pin-Ups 2" is about the closest to mainstream reference audio that I've heard in adult. "Zazel" is also very good, but I think that's because there's a lot of good bass in the soundtrack.

Dolby Digital and DTS are gimmicks. It's not even worth arguing that they're not. At best "Dolby Digital" means a Dolby Surround track that's been matrixed from stereo. And the NuTech discs with DTS have production audio that could only sound worse with the fidelity of DTS.
