The "cowgirl" position became very popular, very quickly, right after hard core features started playing in theaters; for many reasons, most of which were not all that noble - but effective.
For example, men and women kept their pubic hair and much stronger lights were needed to not only see the action, but to get enough exposure when we used much slower film. Today, guys are still told to spread the woman's ass cheeks to show more of her pussy, but for different reasons: Now we try to cover her facial expressions and see her pussy at the same time. When she's looking back as if to watch his cock, during "cow girl", there's no way she can see his cock. She's been told to look over her shoulder.
Another reason for the "cow girl" position in the "old days" was because the guy's dick would falter too often without shooting enough coverage; and it was easier to pan the camera away from his dick to something else usable, as well as pick up the soft, or non explicit footage.
