I'm curious, as I saw a BTS clip where a porn director was holding a handful of hundreds and he said that it was because the next day he was doing "go sees" all day. I guess it's like regular modeling go sees, where they check you out and see what kind of shoots you'd be a good fit for, but I'm curious as to how these work in the XXX world.

Same thing... sorta. In the porn world there's the part where you take off all your clothes and they take pics right then and there for reference. Then you get dressed and go to the next place. Don't know that the non-porn world has that "Polaroid" moment :)

According to my extensive knowledge of America's Next Top Model, the non-porn world does indeed have these "Polaroid moments." :)

It's possible the money was for "extras" or for agent fees if he booked talent immediately, or for some other purpose altogether. Back in the day (i.e. when I was active talent), some of the directors, producers and agents were very friendly and went out to eat, played poker, and did regular guy stuff together. I could imagine having cash on hand for something like that if you were going to a cattle call.
