Not every woman reacts the same way. Hollywood goes with the same reaction over and over because it is easier. By convention everybody knows what is being conveyed.
I don't think it's as much why women moan as why they don't. Moaning comes naturally.
Guys learn to keep quiet so mom won't hear them masturbating in the bathroom.
Girls also keep quiet. And if a girl is having sex for years in dorm rooms or on the sly in her parents' house, she's going to get a habit of being quiet. She might also feel self-conscious about she sounds.
Wetness is a good measure, more so than sounds or even what she says, since her self-lubrication is an involuntary result of her arousal. It can't be faked. Having said that though, I'm pretty sure there are conditions, both physical and emotional, that can inhibit it. In other words, just because she doesn't drip like a faucet when she's with you doesn't mean she doesn't like or love you or find you attractive or a good lover.
Being on the pill can change a woman's hormones enough that she may lubricate more. A lot of that stuff is hormonal, influenced by other things (monthly cycle, age, pregnancy, health issues), as well as arousal.

When I lived with roommates, I trained myself to masturbate silently, and that habit has lasted to this day, even though it does feel even better on the few occasions that I do moan. It just feels strange to moan by myself.
I also agree with the self-conscious aspect. I know that when I got back into having sex (I was celibate for several years) it felt very strange at first to moan, I felt like my husband may have thought I was putting on an act. I am a moaner, a screamer, a shrieker, if you will! The way I see it is actually a natural thing (and lindi made some great points) but also I like to talk about it in terms of martial arts. Think about most martial arts, you are instructed to shout while exerting the force, "HIYAAAAA!!" etc. etc. Why? Well, it increases the intensity of movement and power. When you translate that to fucking, it just makes it feel better! It drives me insane when a guy is totally silent during sex. There's all kinds of non-verbal communication going on during sex, licking, biting, grabbing at whatever bits of skin you can reach from where you are... the moaning's all part of it. Actually, it is not for the power or increased intensity of movement in martial art. It is more to strike fear in the enemy, and get a mental advantage.
