I've only met a handful:
Christy Canyon - Feature stripped at a club in San Francisco (New Century Theater). Was signing autographs backstage. I asked for a hug & got a big one! Never forgot that! Love her!
Asia Carrera - Signing autographs at an adult bookstore (Pink Poodle) in San Jose. I brought her a single rose. She thought I was sweet. LOL.
Tiffany Mynx - Signing autographs can't remember where. Still have them.

If you include recent retirements, I've met Lexi Belle, Adriana Chechik, (both at cons in my home town, AC actually at a pizza shop nearby). When I was living in the States, travelled to cons to meet Kendra Spade, Kimmy Granger and Teal Conrad. I'm not *certain* of this, but I thought I saw Aidra Fox at the airport one time (in New Zealand). Met Jillian Janson too, but I won't go into how that happened.
Still want to meet Abella Danger, Gianna Dior, Aidra Fox (properly), Eliza Ibarra, Karlee Grey and Mia Malkova. Not sure how likely that is in the current circumstances, but a boy can dream.
I have met Candy Samples, Vanessa Del Rio, Veronica Hart, Bunny Blue, Christy Canyon, Siobhan Hunter, Tricia Devereux, Aurora Snow, and Lorelei Lee.

I'd rather not mention because some of them were very hard to meet and required some unique channels to meet them. If I mention it here it can "potentially" tie this post back to my identity. Better safe than sorry.

Oh, and how can I forget that I've met Abigaile Johnson! It's a pity that she wasn't allowed to shoot porn in the US after her initial round. Could have had so many amazing scenes with her! She's very open minded.
Back when Cons were a thing I had the privilege to meet many stars and converse with them. I've met Alexis Texas, Phoenix Marie, Asa Akira, Amia Miley, Kelly Divine. Now stars who I've had a convo with are, Keisha Grey, Abella Danger, Jillian Janson, Brianna Banks, and Kissa sins. There was a private party in downtown Chicago once where Riley Reid, Jayden James were there and that was fun. Riley was dressed super sexy and was a blast to hang out with. It's never been a disappointment to meet any of these stars, they always been super nice and chill to talk too.
I've met a few although none too recently - Raquel Darrian, Tori Welles. Porsche Lynn, Tera Heart, the late Anna Malle, Devinn Lane, Sydnee Steele and Jessica Drake. Of all of them, Anna Malle, Tori Welles and Jessica Drake were the friendliest. Raquel Darrian was the most stand-offish. Sydnee Steele struck me as a very sweet but shy person.
April or may 2017 I met Jodie Taylor in Paris. I was going to work, riding my bike and she was having a coffee, outside a nice small place. I couldn't believe it so I stopped and went back and it was her. Next day, same thing happened again and I stopped and went to have a coffee, but was too shy to talk to her, especially int the morning as she was quietly having her coffee and a cigarette. She was casually dressed, with surfer sunglasses, southern next door look. No make up but glowing, a natural beauty, as we know.
Yeah, Jamie Summers was the better known Brat, but Julianne was terrific as well. Met her at Show World, which was sort of NYC's porn Disneyland. Her husband/bf stood by as she took photos with the fans for a fee. Recognized him as he was the guy who did the anal scene with her in the Brat series. She put on a few lbs. & had a short post Brat porn career.
Never met one in any real life situations, only at official book store signings, strip clubs, and Exxxotica conventions:

I'm not going to bash any of them because I am sure it is hard for them to act really nice and perfect around dozens of strangers during a day at a convention but .... ... the most embarrassing experience was with about the 2nd one I met in my life and I didn't know the exact ground rules about touching. But I am naturally shy and was rather timid. Naturally after a good chat we walked nearby to the photograph area, she put her arm around me real nice (like a girlfriend would) and then I put my arm around her (shoulder) and I could tell it was rather awkward for both of us. She then said to me, 'are you a virgin?' I laughed and then said, well, no. :) I give her balls for saying that to a 'customer' but it was kind of weird watching her movies after that.
But I've come a long way since then including getting to 'cup' Stormy Daniels breasts and it wasn't awkward at all! :)

I met Amee Donovan through a mutual friend in the late 90s before she went into porn and we did the typical stupid townie stuff that you do if you are from the midwest and have nothing to do. Had a lot of fun!
I've met everyone I've shot with, of course, but the ones that stick are the friends I've made. Mostly people behind the scenes, but I keep in touch with a handful of performers.

I've met several at strip clubs, and have discussed some of these on other threads. I once saw Faye Reagan sitting alone at a coffee shop. I was too shy to approach her, so I never really met her.
In the mid 90s, I had five or six encounters over a two to three year period at a couple of different San Francisco strip clubs with a porn star who was well known enough to get the very occasional box cover. She was heavily on the feature dance circuit, and I remember in one of our first meetings, she told me that that she was using the money that she was earning to put herself through college. Her interest was always in finance, and once she found out that I worked in finance for a living, during our next several meetings all she wanted to talk about was real estate! Well...at what proved to be the very last time I ever saw her, she gave me her business card - she was a real estate agent for a well known California real estate broker! She had her real name on the card, her phone number, her email address and...her picture. So I knew the card wasn't a joke, and she asked if we could stay in touch. I was in a bit of state of shock, so I reciprocated by, yup, giving her my business card. I at first really regreted that, but she trusted me, so I trusted her. We started a professional email dialogue that lasted maybe three years. I'm in my late 50s now; she's I think in her late 40s, and really I was kind of a mentor to her. I always found it fascinating that she reached out to me for advice, but I came to appreciate it. Anyway, I have not heard from her since right around the millenium, but I will admit to occasionally searching online to see what she's up to. She keeps an active LinkedIn profile, and I've always been pleased to see that she remains a successful professional woman. At one point in one email exchange she asked me to promise to never "give up her identity". I told her that I wouldn't, which is why I am not naming her here, and I have never seen anything online saying that "real estate agent X used to be porn star Y" (and I've looked). I've always been surprised she's managed to keep her prior life hidden; i bet she wouldn't be able to today.
working in the industry, so, my post from the opposite POV. It´s really nice and fun meeting fans, although, sometimes I can be quite shy. So, it´s great when people can just chat, rather than being overwhelmed, just normal and not like all stalkerish. Many have said it was surreal meeting me, this I like.
I have people email or text, they see me in the local shops, but didn´t want to say hi, and i´m like, just speak to me, i´m just me.. Nice of people to care about distancing and respect, but no problem just saying hi!
At a few shows, i´ve spoke and signed for some guys, i´ve also met a few great stars of the industry, Ben Dover, we remained acquaintances, and the many British talent i´ve worked with, it´s nice to always have a nice continued rapport with people.
Anyway, the moral or point to my post, always just enjoy chatting and speaking to everyone in the world, everyone enjoys a selfie, so just say hi!
